Kraut and Kimchi

The humble cabbage transformed using the freshest local ingredients (where possible), herbs and spices. Handmade in small batches in Norfolk and aged naturally with no accelerators.

We never pasteurise our ferments, so they are full of gut-boosting bacteria and bold, fresh flavours to promote digestive health and help boost the immune system.

All of our krauts and kimchis are raw, vegan and gluten free.

Classic Sauerkraut

Our classic sauerkraut with juniper berries. Simple but big on taste, and very versatile.

Ingredients: White cabbage, juniper berries, sea salt

Korean Kimchi

Our take on the Korean Kimchi. We use tamari and kelp to give our vegan kimchi its umami flavour. Mildly spicy and packed with flavour.

Ingredients: Chinese leaf, cabbage, daikon, pear, gouchugaru chilli, tamari soy sauce, kelp, spring onions, kale, ginger, garlic, sea salt

Beetroot Kraut

The beetroot gives this kraut a sweet, earthy flavour.

Ingredients: White cabbage, beetroot, sea salt

Mexican El Curtido

A wonderfully smokey and aromatic kraut, mildly spicy.

Ingredients: White cabbage, onion, carrot, garlic, smoked chipotle chilli, cumin, oregano, sea salt
